Phew! Last ride before #ironmanmaine703!! It was the first time the entire crew actually got to train together all season. We took a nice and easy 30 mile ride through Lincoln County on a very foggy morning. We had a lot of laughs, confused a nice gentleman with our triathlete way of speaking about ordinarily taboo body issues (mostly about who was most likely to be shark bait on the swim... 🦈😂), and got to fix a blow out. #blamekat as she started the ride saying she wanted to see how to use the CO2 cartridges #jinxed

I took the fam bam on a brunch date! I may or may not have shared any of my French toast...
✨you can’t beet this✨I think beets get a bad rep because people are used to eating them in very few ways - steamed, cubed up, in a salad. BORING. I want to show the world how every vegetable can be delicious👇🏾
behold my Beet-Jalapeño Tostada with Arugula & Hot Pepper Cheese Curds (optional):
** 2 missionfoodsus yellow corn tortillas ** 2 tbsp @tofuttibrands plain cream cheese ** black pepper & cumin powder ** 1 red beet - sliced ** 1 jalapeño - sliced ** 1/4 onion - sliced ** 1 garlic clove - sliced ** 1/4 tsp cumin seeds ** fresh coriander - chopped ** salt ** handful baby arugula ** hot pepper cheese curds crumbled
1. Sauté beets, jalapeños, onions, cumin, garlic in olive oil with salt. Sauté until fork tender. Toss with chopped coriander and set aside.
2. In the same pan, add a bit more olive oil and toast each side of the tortilla until light brown and starting to crisp. Set aside.
3. Top each tortilla with cream cheese - sprinkle with black pepper & cumin. Top with arugula then beet mixture & garnish with more jalapeños and crumbled cheese curds.
4. Stuff your face!
So... I made poached egg 🍳 avocado toast with sprouted bread, (garlic, lemon 🍋, and cilantro) guacamole, pickled onions ( I made earlier), and poached eggs 🍳 , topped with queso fresco and cilantro. They were yummy! #avocadotoast#poachedeggs#pickledonions#brunch
A little brunch never hurt no one! We finally got to visit Baker Street Cafe and now I'm just wondering what took so long! This place was and amazing and I wanted to order everything on the menu 🤤.
