A big concern I hear about plant based eating 🌱 is that people want leftovers! It's a common fear that will vegan food it's hard to make a big batch of something and keep it for the week without it being boring (it isn't all beans and rice, folks). This isn't a problem at all, as proven by my husbands wrap he made for a lazy Sunday lunch.

Leftover Asian fried tofu from our most recent sushi date, hummus we always have in the fridge, and various ingredients left from salad meal prep. Any parent will tell you that sushi dates are few and far between, but I bet you could have more than you think if you just plan. Make a batch of Asian fried tofu and throw it in everything! Salads, wraps, stirfrys, and then its ready to go for sushi night. Marinate tofu overnight and throw your washed rice into a rice cooker/slow cooker to save even more time.
