@nigellalawson Light Potato Salad from @nytcooking Traditional, fried chicken is accompanied with more heavy and rich carbs like mac and cheese, mashed potatoes, waffle etc. But I wanted something light and use up the baby potatoes I had at home. Now potato salad seems like a good option but my husband hates mayonnaise with every fibre of his body. And specially in salads, he won’t touch it with a 20ft pole if he sees mayo is salad. Then in NYT cooking, I stumbled upon this recipe. I made two changes- one unintentional and one intentional. I completely forgot about the mustard seeds and dumped potato vinegar mixture in the oil with the bacon. Secondly, I used some rocket leaves at the end cause I wanted some greens with the chicken. Even with the changes, the end result was nothing sort of spectacular. I mixed the potatoes with vinegar and scallions while it’s still hot. The vinegar, and later the oil with bacon, really permeated the potatoes, infusing them with the all the wonderful fall our combination . The bacon ( use beef or turkey bacon if you want) added a savoury note while cutting down the acidity of the vinegar. I felt, rocket was the perfect partner, with the peppery flavour, adding another depth to this wonderful salad. I am sure to add the mustard seed the next time I am making it. Get the #recipe below! . 1) Mash 1 can of (14.5 oz.) Libby’s® Sliced Carrots 2) Whisk together 4 eggs, 2 1/2 cups plain kefir and ¼ cup brown sugar. Add mashed carrots, ¼ cup melted butter, and 2 tsp vanilla; whisk to combine. 3) Whisk together 1 ½ cups all-purpose flour, 1 cup whole wheat flour, 2 tsp baking powder, ½ tsp baking soda, 1 tsp cinnamon and ¼ tsp salt. Mix in ¼ cup unsweetened coconut (shredded). 4) Add egg mixture to the dry ingredients and stir just until moistened. 5) Coat preheated waffle iron with cooking spray. Pour 1/2 cup waffle batter onto waffle iron and cook according to manufacturer’s instructions. 6) While waffles cook, whip together ¼ cup nonfat Greek vanilla yogurt and 4 oz. neufchâtel cheese with electric mixer for optional whipped cream cheese topping. Add all of your ingredients to the blender, bake it up while you're showering...you'll then be beckoned back into your kitchen by a heavenly aroma, and your family will think you're a professional Baker with superhuman capabilities! Rachel's Notes: Try adding 1/2 teaspoon of cinnamon to the batter if you love cinnamon. Also, try adding 1/2 teaspoon of pure vanilla bean extract for another flavor level. Use any dark chocolate chips of your choice: the higher cacao percentage, the better! I really think mini chips work best for breads because they don't overpower. If you're looking to keep sugars lower; try Lily's brand chocolate that is sweetened with stevia. Chopped walnuts or pecans would also be a fabulous mix-in if nuts are your thing. makes 12 servings Ingredients: 2 cups old fashioned rolled oats 1 tsp baking soda 1/2 tsp sea salt 3 medium, very ripe bananas 1/4 cup raw honey or pure maple syrup 2 large eggs, at room temperature 2 Tbsps melted ghee, clarified butter, or unrefined coconut oil 1/4 cup mini dark chocolate chips Instructions: Preheat your oven to 350 degrees f. and line an 8x4 inch loaf pan with parchment paper. Place the oats and baking soda in a blender, and process until flour-like consistency. Add in the remaining ingredients, except for the chocolate chips, and pulse for about a minute more. I like to stop halfway and scrape down the sides of the blender with a rubber spatula. Stir in the chocolate chips, then pour the mixture into your prepared loaf pan. Successful Weekend Haul!! Not only is it important to buy local but it's freaking CHEAP! All of these veggies came to $6.75, incredible. Those zucchinis are some of the biggest I've ever seen and they were $0.50 each. I finally got a library card and took out a book I've been wanting to read for awhile now, library's are an awesome zero waste option books aren't made to sit on shelves untouched for years they are made to be read by many.

This is the #recipe : Serves 6 Time: 1hr 20 mins (prep and cook) Ingredients 1 tablespoon oil or butter 1.5kg peeled potatoes 220g (or 1 packed cup) of The Kimchi Company Original Kimchi, finely chopped 200g grated tasty cheese 100g grated mozzarella 1 cup thick cream or sour cream Salt Pepper Toasted sesame seeds for serving Finely sliced spring onion for serving Method: Preheat oven to 170 degrees Celsius. Grease a 24 cm x 18cm baking tray (at least 1-2inches deep) with oil or butter and set aside. Using a knife or mandolin, slice the potatoes into 2mm thin slices. Layer slices of potato on the bottom of the greased baking tray and season the potatoes lightly with salt and pepper. Then lightly sprinkle a couple tablespoons of the tasty cheese and mozzarella. Scatter some kimchi over the cheese and repeat the cheese layer. Repeat the layering of potatoes, seasoning, cheese, kimchi and more cheese, finishing with a top layer of potatoes. Bring the cream or sour cream to a simmer in a saucepan and season with salt and pepper. Pour the cream over the layered potatoes then place the tray in the oven to bake for 45 minutes. Scatter a handful of cheese over the top and bake for a further 10-15 minutes or until the cheese is bubbly and golden. Chicken Teriyaki mit Parmesan-Ofen-Spargel 🍽 #foodporn #dinnerideas #easycooking #ofengericht #spargelliebe #käsegehtimmer #healthyfood #tasty #kochenmitliebe #teriyaki #essen #tasty #recipes ~ #zutaten 📝 (2 Personen): • 400g Hähnchenbrustfilet • 400g grünen Spargel • 2 Tomaten • 6 EL Parmesankäse • Rapsöl • Salz, Pfeffer • Sesam / Für die Teriyakisauce: • 1 kleine Paprika (spitz, rot) • 2 Frühlingszwiebeln • 100ml Sojasauce • 2 EL braunen Zucker • 1 EL Agavendicksaft (alternativ: Honig) • 2 EL Wasser • 2 EL Reisessig • 1 Knoblauchzehe, gepresst (alternativ: 1 TL Knoblauchpulver) • 2 TL Speisestärke ~ Zubereitung 👩🏼‍🍳: 1. Ofen auf 200°C Ober-/ Unterhitze vorheizen. Spargel waschen, schälen, ggf. die holzigen Enden abschneiden und in eine Auflaufform geben. Mit etwas Öl beträufeln, salzen und pfeffern. 4 EL Parmesan darüber geben und unter die Spargelstangen mischen. Spargel auf mittlerer Schiene in Ofen geben und ca. 30 Minuten backen. Die Tomaten klein schneiden und 5 Minuten vor Ende der Garzeit über den Spargel geben. 2. Das Fleisch waschen und ggf. in mittelgroße Stücke schneiden. Öl in einer Pfanne erhitzen und das Fleisch von beiden Seiten scharf anbraten (ca. 3 -4 Minuten pro Seite). Fleisch aus der Pfanne nehmen und Pfanne kurz bei Seite stellen. 3. Für die Sauce die Paprika in sehr fein schneiden. Die Frühlingszwiebeln in feine Ringe schneiden. Die restlichen Zutaten vermengen. Die Paprika und das weiße der Frühlingszwiebeln in der Pfanne anbraten. Dazu dann die Sauce geben und aufkochen lassen. Bei mittlerer Hitze die Sauce für 2 Minuten simmern lassen (bis sie andickt). Das Hähnchen hinzufügen und in der Sauce wenden. 4. Alles auf einem Teller anrichten. Spargel mit Parmesan betrauen, das Fleisch mit etwas Sauce, Sesam und den grünen Frühlingszwiebelringen garnieren.
