Lemon Parmesan Salmon with Corn, Tomato, and Avocado Salad. Because I love a good Friday night dinner that's easy...and actually GOOD. Enter this salmon. It's spicy, herby, lemony, has a touch of parmesan, and every bite melts in your mouth. Add garlicky yogurt + tomato salad. By @fithealthyrecipes ~
Watch the vid and then grab the recipe below 1. salmon: rub the salmon with 2 tsp paprika, 4 grated garlic, zest of 1 lemon, pinch of crushed red pepper flakes, 1/4 cup parmesan, and a pinch each of salt and pepper. Drizzle with 1/4 cup olive oil.
2. yogurt sauce: combine 1 cup plain greek yogurt, 2 tbs lemon juice 1-2 cloves garlic and a pinch of pepper in a bowl.
3. grill: Heat your grill (grab the skillet + oven directions on the blog) to medium high heat. Grill the salmon, skin side down. Cover and cook until skin is lightly charred, 4-5 minutes, carefully flip and grill another 3-4 minutes.
4. salad: add the 1/2 cup chopped basil, 1/4 cup chopped cilantro, 1/3 cup olive oil, 1 tbs lemon juice, 1 tbs chives, and a pinch each of crushed red pepper flakes, salt, and pepper to a large serving bowl. Add the 1 can chickpeas, 4 cups grilled corn, 2 cups tomatoes, 1/2 cup feta, and 1 diced avocado, toss to combine.
5. serve: spread the yogurt sauce onto plates. Add the corn salad, then the salmon. Eat!
