WHAT’S FOR DINNER?! Tonight I made a VEGAN DISH! It’s my take on a “carne con Chile” 🤤 I’ve been a pescatarian almost two months now & I didn’t want seafood for dinner so I whipped this up! If anyone knows my mama, you know she would always make this. It became my siblings and my favorite dish! I used @gardein Porkless bites (didn’t use the sauce) & omg so good! Literally tastes like the real thing. I sautéed the bites with oil & then I added chopped up asparagus & added it together. I made a tomatillo + arbol de Chile sauce & added it to the mix. For sides, I did some sweet potato, spinach & onion with a little salt & pepper. Then of course some quinoa. This dish was amazinggggg. Can’t wait for my boyfriend to come home so he can try it also😋

These are Paneer aur Chutney wale Parathe ..Great for #jainchaturmas and very quick and easy to make . Do you all remember the video I had posted before sometime. About the parathas made in Chilli oil. These too I made in chill oil and #yougottaeatthis to know the Amazing taste the oil imparts . Served with Coriander Mint Chutney and Anjeer Barfi .. . . . Recipe . Filling : Grate paneer , add thick green chutney ( little spicy ) salt to taste , amchur powder, jerra powder ,pav bhaji masala ( I always like to add pav Bhaji masala to paneer paratha ) and a pinch of sugar . Mix very lightly . Taste and adjust flavoring accordingly.. . PS: As this is for Jainchaturmas I'm not using onions. But usually I add finely chopped onions in this .Do add if you like . .Dough : Take 3/4 cup whole wheat flour, add 2 tsp ghee or oil . Salt to taste and knead a semi soft dough. . Make parathas and cook with chilli oil.. I really enjoy cooking and I really enjoy Indian food. After several days camping and a day and a half roaming the streets of Nanaimo I was so ready for a home cooked meal. Dinner tonight was a black lentil curry with brown basmati rice. Absolute.flavor town on this one. Curry's are probably my favorite thing to cook, so easy and so versatile.

Vegetarian stir fry! Ingredients: 1/5 packets of satay honey tofu Handful of cashews 1 packet of padthai noodles (rice noodles) 1 red capsicum 1 broccoli 1 brown onion 1 bunch of Asian greens Half a bag of snow peas 2 tablespoons of soy sauce 1 tablespoon of sesame seed oil Olive oil 2 tblspoons of sweet chilli 1/5 jar of honey, soy and garlic sauce. Garlic salt Salt and pepper Key utensils: Wok or large fry pan, knife, chopping board. Method: Place wok onto a high heat with sesame oil and olive oil. Wash asian greens, pull apart from bunch and place into the wok. Chop the capsicum and the brown onion, trim the snow peas and add to the wok. Next boil the kettle. Place noodles into a large bowl and pour water over the top untill covered. Cover and leave for 5-7 minutes. Turn down heat of the wok and place another frypan onto the stove with oil. Once hot place the tofu on and cook untill both sides are brown and glazed. Take off the heat and dice into square pieces. Drain the noodles and add to the wok along with the tofu. Next pour half a jar of the honey soy and garlic sauce, the soy sauce, the sweet chillie sauce, salt and pepper and garlic salt and mix together cooking for a further 5 minutes of a medium high heat. Every time I uncover a new, better way to prepare tofu, I fall in love with this ingredient all over again 😭♥️ If you don't like tofu, I urge you to give it another shot. But this time, play with it in your own kitchen instead of subjecting yourself to the mercy of often-bland "prepared" tofu in a restaurant. It usually sucks. Its ability to change textures and absorb flavors is amazing, making it one of the most versatile ingredients I know of. Pictured is Chick-fil-A style nuggets: tofu marinated in pickle brine, coated in a salty-sweet breading, then pan-fried. Light crunch on the outside, flavorful fluffy texture on the inside. What’s the BEST way you’ve ever cooked up ONIONS?!! For me, it’s Balsamic Roasted Onions—total show-stopping side dish!!!💥(link to my book + more great recipes in bio!) #meatontheside • INGREDIENTS: 4 medium Vidalia onions, cut into ½-inch slices (skins left on) ½ cup balsamic vinegar ¼ cup olive oil 3 tablespoons honey, more for drizzling 3 tablespoons Dijon mustard 1 tablespoon finely chopped fresh rosemary leaves 1 teaspoon kosher salt, more for sprinkling 1 teaspoon ground black pepper 1 teaspoon red pepper flakes • DIRECTIONS: 1. Place the onions in a large plastic food storage bag or shallow dish. In a small bowl, combine the balsamic, olive oil, honey, mustard, rosemary, salt, pepper, and pepper flakes. Pour this mixture over the onion slices and close the bag or cover the dish. Marinate the onions in the refrigerator for at least 4 hours, or overnight; be sure to occasionally shake the onions around in the bag or stir them in the dish ensure that the marinade gets into all parts of the onions. 2. Preheat the oven to 400°F. Lay the onion slices in a single layer on a baking sheet, then bake them until the onions are very tender and dark in color—about 55 to 60 minutes, removing them from the oven to lightly baste the tops with more of the vinegar mixture every 15 minutes. 3. Spicy Cauliflower Tacos with Mango Salsa 🌮🥑 . . Here in California, #tacotuesday is everyday! Why should one limit eating tacos to a single day only? 😂 These tacos are so delicious and healthy, you will crave them every day! This recipe is perfect for meal planning as well. Here you go: Spicy Cauliflower Tacos with Mango Salsa 1 medium Cauliflower washed and chopped in small pieces. I usually separate the florets in smaller pieces. Line the Cauliflower pieces on a parchment paper, season with taco seasoning or make your own (1/2 tsp cumin, 1/2 tsp cayenne or chili powder, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp paprika mix) Pinch of salt Drizzle with some olive oil (optional) and roast in 410 F for 15 min until Cauliflower is slightly crispy and brown on the outside. Meanwhile, make the mango salsa 1 large firm mango peeled and chopped is small cubes 1/2 of small red onion chopped in small pieces 1/2 of red bell pepper chopped in small pieces 1 small jalapeño seeds removed and chopped. Handful of fresh cilantro chopped Juice of 1 lime. Salt. Combine all the ingredients. Set aside. Warm 6 corn tortillas. Assemble your tacos by filling them with spicy roasted cauliflower, mango salsa and avocado. Squeeze more lime juice on the tacos if desired. Sweet and green plantains vegan picadillo turnovers. 4:1 Green to sweet ratio. Stuffing: Meatless crumbles seasoned with ground cumin, garlic, onion powders, pinch of salt, tamari. Then sautéed with an onion/tomato/sweet pepper/garlic refrito. Once cooked, bay leaf, raisins, cilantro and manzanilla olives. Made the discs with the plantain mix, margarine and cubes of ice (don’t add water). The ice melts gradually while pureeing the plantains, and it helps the masa mantain some temperature. This is way better at the moment of assembling the turnovers and they won’t fall apart. Mind a binder is not used. You may seal the turnovers on each side vs deep frying them. Lime or hot sauce for serving. #vegan #vegetarian #turnovers #vegetarianrecipes #plantbasedmeals #latinamericancuisine - Empanaditas de verdes y maduros pintones. 4:1 verdes a pintones en cuestiones de ratio. Para el relleno: carne vegetal sasonada con tamari, ajo, comino, cebolla en polvo. Se refríe con cebolla, ajo, tomate, luego pasas y olivas de manzanilla. Se le pone laurel y cilantro. La masa de los discos se hace con los verdes y pintones, margarina y un poquitito de sal. En vez de agua, se le pone cubos de hielo, mientras majas el mix. De esta manera el hielo se va derritiendo poco a poco y la masa no se enfría completamente y es más fácil de moldear al armar las empanaditas, sin riesgo a que se cuarteen. Meaty VEGAN BBQ Skewers😍 👇🏽Full recipe below👇🏽 . These vegan ‘Meaty’ BBQ Skewers with Garlic Aioli are just AMAZING😍 100% taste with 0% cruelty 😍 . Ingredients Meaty Skewers: 1.5 cups wheat gluten ⅛ cup nutritional yeast ⅛ cup chickpea flour 1 Tbsp smoked paprika, barbecue spice, onion powder, garlic powder ⅛ tsp black pepper ½ tsp salt ½ cup water 2 Tbsp soy sauce 1 Tbsp tomato paste, dijon mustard 2 Tbsp olive oil 
Marinade: ⅓ cup tomato sauce ¼ cup oil 1/4 soy sauce 1 Tbsp tomato paste 2 Tbsp maple syrup 1 Tbsp molasses/date syrup 1 tsp apple cider vinegar/lemon juice ½ tsp liquid smoke 1 tsp dijon mustard 1 Tbsp barbecue spice, garlic powder, onion powder, sweet paprika, smoked paprika ½ tsp cinnamon ¼ tsp cayenne pepper ½ tsp black pepper salt, to taste Method 1. In a medium bowl, combined all dry ingredients. In a separate bowl, combine all wet ingredients. Pour the wet into the dry ingredients and use your hands to knead the mixture into a firm dough for 3 minutes. The dough should be firm and not too soft (otherwise add some more wheat gluten. 2. Divide the dough into 7-8 pieces and knead them into long, thin strips. Use your hands to shape them into long sausages. Take a skewer and wind the strips around the skewer, piercing the ends onto the skewers so they’ll hold. 3. For the marinade, combine all ingredients into a rectangular box that is wide enough to fit the meaty strips, then whisk all ingredients together. Place the strips into the marinade and cover them evenly. Let them marinade for 2-4 hours or overnight to soak in all the flavors. 4. Once your skewers are marinated either grill them until they’re super crispy (definitely the best option), bake them in the oven at 200°C/400°F or pan fry them in a bit of oil. . Press tofu for 10 minutes by wrapping in linen and placing smething heavy on top. Cut into cubes and coat in ½ cup buffalo sauce + 2 tbsp olive oil. 2. Roast tofu on a parchment-lined baking tray for 30-35 minutes at 375F. 3. While tofu is roasting, add remaining ingredients to a large mixing bowl and stir to combine. 4. Add roasted tofu to mixing bowl and bring to room temperature. Move to the fridge to cool completely. 5. Once cold, serve buffalo tofu salad in butter lettuce cups. 6. Please ignore the burnt crust because this ish was still SO gooood 🤩 • First baked the crust with an olive oil garlic base and feta cheese for 6 minutes ➡️ then added the arugula and peach slices before baking for another 5 minutes.
