tasty,yummy,spicey baigan ka bharta in desi style for desi food lovers.
we need one eggplant/baigan,1 chopped onion n tomato,two green chillies,1/2 inch ginger,pinch of asfoetida/hing,1/2tsp desi ghee for tadka,1 1/2tsp mustard oil n salt, 1/2tsp dry mango powder/amchur
first of all we will grease the baigan n slit it like in the pic.put green chillies n ginger in each slit
and roast it at very low flame as baigan has to tender from inside also.in the meantime we will make tadka also. pour desi ghee in a pan n put asfoetida in it now roast onion when onion get brown roast tomato also add some salt in it.now tadka is ready cover this pan.roast baigan from all side it will look like shown in the pic.when get roasted leave it to cool down.now take out green chillies n ginger from baigan n peel it .mash baigan green chillies together finely. chopped the ginger also n add all these to tadka n stir for 1-2 min at low flame.add amchur also.now put off the flame n add mustard oil in it n stir thoroughly. if u dont like the taste of mustard oil dont add it. but the oil's pungent taste add the flavour double. garnish it with corriander leaves n serve hot n yummy baigan ka bharta with chapati.
