POST WORKOUT LUNCH-baked salmon with a red pepper tapenade, sweet potato chips and steamed broccoli with some vegan mayo @mr_organic cucumber relish. Also used @hunterandgatheruk
Avocado oil for the marinade. Meals dont need to be fancy, keeping it simple, time saving and less cooking can make an huge difference. Nutritious and delicious!
1 fillet of salmon
Ready roasted red peppers in a jar
2 garlic cloves
Handful of fresh herbs chopped
2 large sweet potatoes cut into wedges
1 tsp paprika
1tsp madras curry powder
1 large broccoli cut into florets
1 lemon juiced
1/2 cucumber grated
Pre heat oven gas mark 7 200 degrees Celsius.
Marinate the sweet potato chips with a drizzle of oil, paprika, curry powder, salt and pepper.
Bake in the oven for 40 minutes.
Whizz up the peppers, herbs, garlic clove and lemon juice not completely pureed but with bits.
Marinate tapenade over salmon and bake on a tray for 15 minutes.
Steam the broccoli until tender
Serve salmon and chips with mayo dip mixed with grated cucumber.
