Not pretty, not perfect, but an almond paste that is home made, simply because I prefer the taste and natural look of ground almonds - without the added colour seen in the more yellow shop bought marzipans. -
Those of you needing to be gluten-free may have noticed listed in the ingredient panel of some shop-bought almond pastes: ‘wheat glucose syrup’, or glucose syrup from barley. These sugar/syrups - like ‘wheat dextrose’ - are (according to Coeliac UK) quite free from gluten, but hey - if you make your almond paste yourself, it’s got no additives, nothing too processed and is just almonds, sugar, lemon juice, extract of vanilla and an egg. And it’s texture and flavour is soooo much nicer!
