CINNAMON ROLL OATMEAL MUG CAKE topped off with chocolate chips and coconut butter drizzle. Dessert in the morning but.... better. Recipe is inspired by @erinliveswhole, but I added in some oatmeal to make it a bit more breakfasty.
Ingredients (serves 2)
1/4 cup coconut flour
1/4 cup old-fashioned oats
1/2 tsp baking soda
1/4 tsp salt
1/4 cup coconut oil, melted
1/4 cup non-dairy milk of choice
1 tablespoon maple syrup/coconut sugar
2 tablespoons chocolate chips, divided
1/2 tsp cinnamon, divided
1 tablespoon coconut butter, melted
Mix together coconut flour, oats, baking soda, and salt in a microwave safe mug/bowl. Mix in eggs, coconut oil, milk, maple syrup/coconut sugar, 1 tablespoon chocolate chips, and 1/4 tsp cinnamon. Microwave for 90 seconds to 2 minutes or until cake is cooked all the way through. Top with remaining chocolate chips and cinnamon. Drizzle on coconut butter, and enjoy warm.
