I’m so thankful that the program I used and coached is a fat loss program!! 😀❤️ I have lost weight in the past but never gone down to a size 6!!!! And I always gained the weight back... 🤦‍♀️ but not this time!! 2.5 years so far!!! 🎉🎉🎉 For those of you who wonder “how can I be losing inches but not much weight?”...read this! 🤔 You’ve probably heard that "muscle weighs more than fat." However, a pound is a pound! As you see in the photo.... this should help you better understand why a photo can show results when the scales do not move. Think about a pound of marshmallows (fat) vs. a pound of apples (muscle). Both weigh the same, yet carrying around a pound of marshmallows is going to take up A LOT more 'room' than carrying around a pound of apples.😲 🍎 💪🏻Since a pound of muscle is smaller in size than a pound of fat (fat takes up approximately 4x the space of muscle tissue) it's very possible to LOOK and FEEL slimmer even if your weight remains the same!!!! 🙌 This is why it’s important to not focus on just the number on the scale! #healthyeating #healthylives #healthycarmen #fattakesupmorespace

Made bbq pulled jackfruit for the first time today and it came out soooo good 🤤 Usually it’s made with canned unripe jackfruit apparently but I made it with some ripe jackfruit I got from the store and it was amazing! Have you ever been attacked by the keto police? 👮‍♀️😭 . . Last night they attacked me and I’m not gonna lie, I got pretty triggered. I was even responding in ALL CAPS because I was so frustrated! 😂 I probably could have handled their attack better, but it was late and I wasn’t really in the right state of mind to go to war with people who we should be finding common ground with 😂 . . Just to be clear though, carrots and peas WILL NOT knock you out of ketosis if you keep it to a serving or two.. . . My only problem with them is that they try to claim their “ingredient restricted version of keto” is the only form of keto that gets to call it’s self “keto”. This leaves lots of people who can’t afford to eat the way they do feeling like they are inferior, and that is pretty discouraging for someone trying to get healthier. . . I’m focused on helping the people who eat Doritos and Big Macs every day get into ketosis. And if they want to make some carrots fit into their net carbs, how would that ever be a bad idea if it’s not knocking them out of ketosis? Sure it’s not wise to eat 3 pounds of carrots, but like I said a serving or two is totally fine and will not knock you out of ketosis... . . This isn’t the usual recipe post... About 2003 I started to eat gluten and dairy free. It’s been a long road to get where I am today. Learning new recipes, coming across and building on my knowledge, and general stubbornness on my part 🤷🏻‍♀️ I got in the habit of avoiding certain foods. Let me say that again. I would eat to avoid certain foods. But I had an aha moment 💡 the other day. It’s not just about what I’m NOT putting in my body, it’s also what I AM putting in my body. (I mean I know we were supposed to eat salads etc etc and do sometimes but not ok the regular) Sometimes I’m just not a salad fan. Sometimes I’m just not a veggie fan. I can eat “healthy,” even making Whole30 meals but not eat enough of the rainbow. Got a bad cold after returning from holidays and decided to make soup at the wknd to perk me up... a battle of the heritages ensued! Granny's Irish vegetable soup vs. traditional Moroccan harira soup? 🤔 Well Moroccan won out this time! 😅 Recipe 🗒: *beef/lamb (skip meat to make it veggie), onions, seasoning and spices (equal ginger & turmeric)... Brown meat then cover with water and cook down. *Add a blended mix of celery, peeled tomatoes (or passata as a shortcut!), fresh coriander & parsley and a kettle of water. *After c.40 mins add cooked chickpeas and angel hair pasta/vermicilli then cook for another 15 mins. *Add flour batter to thicken if needed. Finish with juice of half lemon. Great thing is you can vary amounts according to preferences 👍🏼 Add lentils to bulk it up, and a beaten egg to make it super traditional!
