Breakfast is served 🥞 quick & easy breakfast to fuel your morning! • Recipe: 1 banana (mashed) + 3 tbsp coconut flour + 2 eggs (you can use flax seed egg) + 1/2 tsp baking powder + cinnamon + maple syrup (just a dash - optional) + dash of nut milk (I used @traderjoes dairy-free pumpkin almond beverage.. pumpkin season isn’t over yet🎃) - heat skillet with coconut oil and add a spoonful of the pancake batter (I fit three!!) then cover about 3-5min. - they’ll be nice and fluffy when you cover them 😊 flip and let them cook for a couple min - stack your pancakes! ❄️🍫‘Tis the season for Hu Crunchy Mint Dark Chocolate Coconut Layer Bars. Feel me? . Honestly hold 👏us 👏back from these vegan and grain-free mint dark chocolate coconut layer bars. Too damn good. These beauts from @flora_and_vino are made with a cacao date-nut base, sweet coconut butter center, and our Hu Crunchy Mint dark chocolate top.🍫 . Serves 12-16 slices . INGREDIENTS DATE-NUT BASE LAYER • 1 1/2 cups chopped pecans • 1/2 cup unsweetened shredded coconut • 12–15 pitted Medjool dates • 1/4 cup raw cacao powder COCONUT BUTTER MINT LAYER • 1 1/2 cups raw coconut butter, softened • 1/4 cup pure maple syrup • 1 tsp mint extract (or sub peppermint oil) MINT CHOCOLATE LAYER • 1 1/2 cup Hu Crunchy Mint Dark Chocolate 🍫 • 1 tsp coconut oil (optional) . INSTRUCTIONS ✅ Line a 9×9 square baking dish with parchment paper and set aside. ✅ Add all base ingredients to a high speed blender and pulse until you have a sticky crumble. ✅ Press the mixture into the lined baking pan and press into an even layer with your hands or a spatula. Add baking pan to the freezer while you prepare the next layer. ✅ Rinse out the blender and add in the softened coconut butter, maple syrup, and mint extract. ✅ Blend until smooth, scraping down the sides as needed. Remove the pan from the freezer and pour coconut butter mint mixture on top of the base layer and spread until smooth. Tap the baking pan gently on the counter several times to remove any air bubbles. Freeze for 30 minutes. ✅ To make the top layer, melt the chopped chocolate in a saucepan over medium low heat, stirring often, until fully melted. Remove the baking pan from the freezer and pour the melted chocolate on top of the coconut butter mint layer and spread until smooth. Refrigerate for 30 more minutes until the bars are firm to the touch. ✅ Once firm, remove the dessert from the loaf pan and cut into individual peppermint chocolate slices. Serve immediately. ✅ Store leftover bars in the freezer until serving.

Carbs, my favorite food group 😎😎 I wasn’t going to share this because it was a last minute meal that I threw together for dinner the other night, but SHIZZZZZZ. It turned out so good, I took a photo and here I am, sharing it, because you need to make it too. I think I’ll call it Kalejunkie’s Healthy Chicken Chow Mein 😆 I used chickpea pasta for extra protein and to make it gluten free, but you can use whatever you want, even subbing the chicken for tofu or tempeh to go plant based. Here’s how to make it: - 1 pound skinless, boneless chicken breasts, cut into strips 2 tb olive oil 4 cloves garlic, mashed 8-10 oz spaghetti noodles (I used @eatbanza) 2 cups broccoli florets 1 bunch scallions, chopped 2 tb sesame seeds 1/2 tsp ground ginger 1 tb coconut sugar 1/2 cup coconut aminos 2 tb sesame oil 1/4 tsp crushed red pepper flakes Salt and black pepper to taste - Cook spaghetti according to package instructions. Toss in the broccoli about 5 minutes before the pasta is done cooking. Once done, drain and set aside. While pasta is cooking, get a medium bowl and whisk together the ginger, garlic, coconut sugar, coconut aminos, sesame oil, red pepper flakes, and set aside. Next, heat a large skillet on the stove and add olive oil to generously coat the pan. Season chicken with salt and pepper, and add to pan, flipping to the other side after about 4 minutes or so. Add spaghetti/ broccoli to the skillet, along with the sauce, and mix to coat everything well. Add scallions and sesame seeds, and salt/pepper to taste. ENJOY!!!!! #kalejunkie

Advent! 🕯🕯 von mir gibt es heute daher passend zu den bald anstehenden Festen ein weihnachtliches Rezept für gesundes Früchtebrot, schön gewürzt mit ein paar Trockenfrüchten und viel Protein, denn: #sweetfitchristmas! 😍 dafür habe ich benutzt: - 50g Erdmandelmehl (@foodsetter_de) - 40g entöltes Mandelmehl - 50g Proteinpulver „Vanille“ (alternativ: mehr Mehl) - 150g Magerquark - 1 Ei 🥚 - 25g Trockenfrüchte/Rosinen/Cranberries - 50g Erythrit (@foodsetter_de, alternativ auch hier normaler Zucker) - 5g Backpulver - mind. 1TL Stollengewürz - etwas Zitronenabrieb 🍋 - etwas Rumaroma - nach Belieben: Puderzucker zum Bestreuen und die Zubereitung ist ganz einfach und schnell gemacht: zuerst alle trockenen Zutaten vermischen und danach die feuchten und das Trockenobst zufügen und gut mit dem Mixer verrühren. dann in eine kleine, mit Backpapier ausgelegte Form füllen und im vorgeheizten Ofen bei 160 Grad Umluft etwa 35-40 Minuten backen - wenn er schnell braun wird, einfach mit Alufolie abdecken! UND FERTIG! 👌🏻 das Früchtebrot war wirklich unfassbar lecker und meine Eltern dachten allein von der Optik sogar, es wäre ein gekauftes aus dem Biomarkt 😅 und die Nährwerte sind natürlich nur schwierig zu toppen: diese healthy „Sünde“ hat nämlich insgesamt (!!) nur 900kcal; davon 105g KH, 90g EW und nur 26.5g Fett! diese Werte sind u.a. natürlich den benutzten Produkten zu verdanken, denn im @foodsetter_de-Onlineshop bekommt ihr tolle Feinkost- und Trendfood-Artikel wie Chiasamen, Gojibeeren, aber eben auch tolle Backartikel wie Zuckeraustauschstoffe (Xylit, Stevia, Erythrit, Puderxucker..) und Mehle! 💯 also schwingt eure Backlöffel und backt dieses tolle Gebäck nach, ich bin sicher, es wird euch genauso gut schmecken 🤤

The irony of this side by side pic? One was taken by a prop car outside of a 50s burger restaurant we were about to go into and eat at, one was taken in my bathroom after putting on my workout clothes right before a workout. It’s not just 180lbs verses 145lbs in these pics. It’s not just size 16 jeans verses size small workout pants. It’s what has happened IN BETWEEN these two pics, that tells the true story. What you don’t see in between these two pics, is years of getting up and exercising every morning, when my current program called for it. What you don’t see is all the date nights with my husband, where I chose to eat healthy food at home before we went out to have fun. You don’t see the scale getting “stuck” at times when my eating may have gotten lax, but reeling it right back in. And you don’t see all of the veggies I put into my basket at the grocery store over the bakery donuts that inevitably are placed in adjoining areas. You don’t see me meal prepping while listening to personal development videos or podcasts, over music or tv. You don’t see me setting an alarm every morning to ensure my workout gets done, even though I work from home and could technically do it any time of the day. You don’t see how I choose to spend my money on workout clothes, or supplements over manicures and massages. And you don’t see how I’m chugging water all day instead of sodas, designer coffees or energy drinks. You see, it’s NOT about being “motivated”. It’s about being dedicated. Because dedication creates discipline. Motivation, is merely an emotion, IMO. It’s the IN BETWEEN that defines who we are. It’s the IN BETWEEN where old habits are broken and new ones are established. It’s the IN BETWEEN where we discover we CAN change our lives, create our own happiness through hard work, and see our goals come to life. It’s not in that “after” pic. Healthy Chicken Enchiladas (compliments of Trudy M)⁠ ⁠ Ingredients⁠ -1 tablespoon olive oil⁠ -1 onion, finely diced⁠ -6 chicken thigh fillets, sliced into strips⁠ -2 cloves of garlic, chopped⁠ -1 tablespoon cumin⁠ -1/2 teaspoon dried oregano⁠ -1/2 teaspoon smoked paprika⁠ -1/2 teaspoon salt⁠ -1/4 teaspoon black pepper⁠ -1 tablespoon apple cider vinegar⁠ -300ml tomato puree /passata⁠ -1 cup chicken stock (or vegetable stock)⁠ -1 can black beans, drained and rinsed⁠ -1/2 cup frozen corn⁠ -8 tortillas⁠ -1/2 cup sour cream⁠ -1/2 cup cheese, grated (any variety)⁠ ⁠ Instructions⁠ 1. Preheat Oven to 180’C / 350’F. Prep a large baking tray by rubbing a little olive oil on the base (you can use parchment paper to make clean up easier).⁠ 2. Heat up a large pot on the stove top. Add olive oil and diced onions. Cook until softened (around 5 minutes). Add chicken pieces, salt and pepper. Fry until juices have evaporated and chicken starts to brown.⁠ 3. Add cumin, oregano, smoked paprika, garlic. Fry for around one minutes, stiring to coat chicken evenly with spices.⁠ 4. Pour in stock, tomato puree, beans and corn. Cover pot and allow to simmer on medium for 10-15 minutes until chicken is tender and sauce has thickened slightly. ⁠ 5. Remove from heat. Use a colander to drain the sauce from the chicken and set sauce and chicken filling aside. *do not throw sauce away⁠ 6. Soften your tortillas by wrapping in foil and heating in the oven for a couple minutes. This makes them easier to work with.⁠ 7. Spread a teaspoon of sour cream on each tortilla and spoon chicken and bean filling on top along the center. 8. Roll up your tortilla and place seam side down in your baking tray. Repeat until all 8 tortillas are done.⁠ 9. Spoon strained enchilada sauce over the rolled tortillas and top with grated cheese.⁠ 10. Bake in the oven for 25 minutes until golden and serve.⁠ ⁠ #healthyrecipes #healthyholidays

Throwback to when me and @gunes204 visited @unitydiner dinner on Thursday. We love going on little vegan food adventures and UnityDiner was on our radar. The food was delicious! I had the “VFC Burger” and Gunes had the “Supreme Dog”. The burger was so good, the brioche bun was soft, the bakon was crisp and smokey, the fried chick’n really tasted like what I remember fried chicken to be (but less greasy and more tasty) and the best thing was the garlic sauce it was mouth watering, I wish they would just sell bottles of that sauce. And did I mention there was a hash brown in there too 😏10/10. I tried a bit of Gunes’s Mac and cheeze and it was nice, not my favourite but still really good. We also shared some triple cooked chunky fries which were super crispy on the outside and fluffy on the inside, like perfect chunky fries should be! The staff were also very lovely and the atmosphere was great, we loved all the plants and the comfy booth. So happy with our experience would definitely be coming back to @unitydiner 💚💚💚💚. . Ps. BANANA NUT COOKIE😍 Sans gluten, sans lactose et sans sucre👌🏻 . . . Voici une recette de cookie ultra facile et rapide à réaliser, et surtout ultra bonne😋 Pour 6 cookies, mélangez 2 bananes mûres réduites en purée avec 150g de petits flocons d’avoine sans gluten, quelques gouttes d’extrait de vanille bourbon et 1 cac de cannelle en poudre. Mixez et formez 6 cookies sur une plaque et papier de cuisson puis rajoutez des noix de cajou, des amandes ou des noisettes sur le dessus. Enfournez durant 15min à 180 degrés. Lorsqu’ils sont bien dorés, placez vos cookies sur une assiette et laissez-les reposer à l’air libre. Une fois refroidis, réservez-les au frigo durant la nuit.
