Reposted from @rooji_the_foodie (@get_regrann) - ❄️Chicken Kofte (Meatballs) Curry❄️ . Perfect traditional winter warmer with a twist. In our house we usually make lamb kofta, my mum likes to batch make them and freeze them to save time, you can do the exact same with my version of chicken kofta too. It’s a labour of love but so worth it, do to the length of the recipe, this post will focus on the meatballs & the next the sauce . To make the kofta (meatballs) in a food processor add one onion (in chunks), 6 green chillies (de-stalked), 5 cloves of garlic & a small bunch of coriander (tbsp roughly). Blitz the ingredients until everything is finely chopped & combined. To this I then added 1.7lbs of minced chicken, one egg, 1 slice of bread (edges removed), 3tbsp of desiccated coconut & 2 tbsp of black chickpea powder also known as garbanzo beans. These are all the binding ingredients for the meatballs, once again process these until everything starts to come together . Finally add the following spices; 2tsp salt, 1tsp red chilli powder, 1/2tsp garam masala & 1 tsp coriander and cumin powder (I used a mix you can add 1/2 of each if you don’t have this). Mix everything together one last time . Oil your hands and scoop enough mixture to create a golf ball sized portion. Using the palm of your hands roll out balls and place on to a board (I cover mine with cling film to prevent it sticking). The mixture should make approximately 20-22 balls . In a large pan heat 5 tbsp of oil before placing in each meatball, allow them to cook on a medium to low heat constantly turning them in order to ensure a seal all the way around. I occasionally turned the heat down low and popped the lid on to generate some steam and allow them to fully cook on the inside. Cut one open to check they’re ready and remove from the heat until later . Recipe Ingredients: (similar to my fried wonton recipe but without walnuts): ~ 2 lbs of bok choy, washed and julienned ~ 1 package of wonton/dumpling wrapper ~ 1 box of firm tofu, drained & mashed ~ 1/4 cup of saute mushrooms ~ 1 tablespoon black bean sauce ~ 1 tablespoon corn starch ~ salt to taste ~ oil Spicy sauce (whisk all ingredients in a bowl until sugar dissolves): ~ 3 tablespoons soy sauce ~ 2 tablespoon chili oil with chili crumbs ~ 1 tablespoon sesame oil ~ 1 teaspoon Chinese black vinegar ~ 1 teaspoon grated ginger ~ 1 teaspoon sugar 🍃 Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl. 🍃 Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, 🌽 starch, combine well & season if needed. 🍃 Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. Barbecue Chicken Flatbread Barbecue chicken flatbread: A quick and easy recipe the whole family will enjoy. Total time: 45 minutes Serving size: 1 flatbread Serves 4 Ingredients 2 chicken breasts, diced into 1-inch cubes 1½ cups BBQ sauce, divided 4 whole wheat naan flatbreads 1 cup red onion, thinly sliced ½ cup cilantro, chopped ¾ cup low-fat mozzarella Instructions 1. Add diced chicken and 1 cup BBQ sauce to a plastic resealable bag and coat chicken well. Place in the fridge to marinate for at least 30 minutes or up to 24 hours. 2. Adjust rack to the top middle of the oven and preheat to 350 degrees. 3. Place naan flatbreads directly onto to oven rack and bake until slightly crispy, about 10 minutes. 4. Meanwhile, over medium-high heat, sauté chicken until cooked through. 5. Slice red onion and dice cilantro, set aside. 6. Remove naan from oven to plate. On each flatbread, spread about 2 tablespoons of BBQ sauce. Top with red onion, cilantro, and chicken as desired. Sprinkle cheese over toppings. Put back into oven to allow cheese to melt, about 5 to 7 minutes. 7. Remove and slice into quarters with a pizza cutter. it’s been a while 😂 here’s a summer nights throwback 🍕 1. In a small bowl, dissolve yeast in warm water. Let it “chill” for about 10 minutes. 2. In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture and then stir together. Use a mixmaster thingy until a stiff dough has formed. Cover until it rises doubled in volume (30 mins) 3. Put the dough on a well floured surface. And roll it out into a pizza crust shape. Ayer hice un pudin de calabaza, pero no quedó como quería... así que hoy han tocado unas galletas de jengibre. La receta de estas galletas se remonta a mi adolescencia cuando aún no teníamos en casa horno y tenía que apañarme con el microondas. No son la “receta definitiva” pero a mí me gustaban mucho y les tengo bastante cariño. Lo cierto es que estas galletas, al contrario que otras, ganan en textura y sabor en los días posteriores a su elaboración. La razón: tienen muy poca proporción de mantequilla, por lo que la textura de las galletas recién horneadas no tiene la típica textura crujiente y que se deshace en la boca, sino que es algo más elástica y gomosa. Sin embargo, al día siguiente, al secarse un poco y perder elasticidad consiguen una textura hojaldrada y especiada muy particular. @socialmums #SocialMumsOct challenge day 19 Just for fun These are some just for fun brownies, I love playing with recipes and developed these banana & peanut butter brownies after a week of baking experiments. I had a couple of variations tested but these are definitely the best, so moorish and gooey! The key with these is not to over mix and to lightly swirl the banana mixture in last, I prefer the texture and flavour distribution. I think these will make it into my winter food box! ❤️ Ingredients 6 oz butter 6 oz dark choc 8oz light muscovado sugar 3 eggs 2 ripe bananas 2 oz peanut butter 3 oz plain flour 1tsp baking powder ❤️ Method . Preheat oven to 180 and line a square baking tin .Melt the butter and chocolate in a bowl over a pan of simmering water stir occasionally, once melted set aside to cool slightly . Beat Sugar and eggs together until smooth . Mash bananas in a bowl and stir in the peanut butter . Slowly fold the chocolate mixture in with the sugar & egg mixture . Sift in the flour & baking powder and fold in. . Transfer the mixture to the prepared tin then spoon the banana mixture in dollops on to, lightly swirl in with a spoon or spatula in a figure 8 movement. . Соление помидоров на зиму🍅🍅 Я каждый год солю помидоры во второй половине октября в большом баке из нержавеющей стали в следующей пропорции: Большие помидоры сорта «Юсуповские» Зеленые, бурые, розовые - 25-30 кг Зеленый сельдерей - 4-5 крупных пучка Чеснок очищенный - 0,5 кг Цветущий укроп - 3 пучка Вода 20 л Соль 1200 Итого: на 1 литр воды 50-60 гр соли Промыть помидоры. Чеснок разрезать вдоль на 2-3 части. Укроп нарезать крупно (10 см) Сельдерей нарезать см 2-3 В кастрюлю или любую емкость сложить слоями зеленые помидоры, каждый помидор проколоть вилкой, в два ряда. Чеснок, сельдерей, укроп. Далее бурые помидоры+чеснок, укроп, сельдерей. Самыми последними разложить розовые помидоры, сверху чеснок, вся зелень. Рассол: можно прокипятить воду и остудить ( было время, когда я так делала) Порциями в чашке или кружке развести немного соли( 0,5 стакана) в теплой воде до полного растворения, долить холодной и залить помидоры. Рассол должен покрыть всю поверхность. Марлю в два слоя сложить и накрыть сверху ( прям опустить в рассол) Через сутки поверх марли можно положить большую тарелку или деревянный гнёт с грузом. Иногда рекомендую поглядывать на свое творение😄. 🍰Vanilice od kokosa 🍰 Primetili ste da uglavnom koristim puter u receptima. E, ove vanilice su jedan presedan, jer njih pravim isključivo sa margarinom. Navikla sam na taj ukus i nije mi to to ako je puter unutra. Usput, i margarin i puter su izuzetno kalorični. Razlika je u tome što se margarin pravi od rafinisanog suncokretovog ulja, a rafinisane masnoće su prilično loše za naše telo. Puter bi trebalo da se pravi od prirodnih masti iz mleka. Zbog toga je uprkos kalorijama zdravija opcija. 🔸1 margarin 🔸70g šećera 🔸2 kesice vanilin šećera 🔸1 celo jaje 🔸300g brašna 🔸100g kokosovog brašna 🔸300g pekmeza od kajsija (ili po ukusu) Margarin umutite sa šećerom, postepeno dodajte oba brašna i jaje. Umesite testo, pa razvaljajte na 1 cm debljine i vadite modlicom. Pecite 15min na 200 stepeni. Dok su još vruće, pola premažite pekmezom i preklopite drugom polovinom. Ako baš volite slatko, u uvaljajte ih u šećer u prahu. 😊
