The name means "Winter Kimchi" ❄️ because it is normally produced in winter! On first sight, it appears like a simple, unexciting side dish which is easily overlooked next to those many colorful Korean foods. It looks basically just like a few pieces of pale radish floating in something watery…👀❔ But your taste buds will find her intricate and fascinating! 👅❕ First, the chunks of radish are crunchy! The liquid tastes refreshingly sour, slightly sweet and sometimes even spicy!🌶 Even better when it's fizzy - like sparkling water or champagne!🍾 After all, this inconspicuous looking Kimchi has quite some character! 😊 She's really just shy! 👼 And she sure can kick!💥.
Dongchimi belongs to the family of "watery Kimchi" (mul kimchi 물김치), which means that vegetables are fermented in a pickling broth which is consumed as well. The most prominent ingredient of Dongchimi is radish. Besides, there are various seasonings which often remain invisible: Ginger, garlic, onion, scallion, seaweed, Korean pear, green chili, dried chili seeds and more. And in contrast to most other Kimchis: No red chili powder. No animal-based ingredients. 🚫🐟 Consequently, the liquid is clear and the taste is pure and clean.🌱💧 Where can you find Dongchimi? Dongchimi may be served as a side dish - most frequently, it is paired with Korean rice porridge. 🥣 You can also simply buy Dongchimi on the market or in stores, like other types of Kimchi!
By the way, it's Kimjang (김장) - Kimchi making season! This means people (mostly women) are busy preparing huge quantities of Kimchi for the rest of the year these days! Perhaps, you've already noticed how huge amounts of napa cabbage, radishes and other common Kimchi ingredients are piling up in front of stores. You'll see tubs filled with fermented fish and shrimps, too. Know that these are used in Kimchi-making - but not for Dongchimi! 😉
